Molasses Sleigh Cookies
« on: December 16, 2015, 09:02:27 AM »
Recipe courtesy of Radio City Rockette: Jacey Lambros. These are tender and chewy! I haven't made these in awhile so I might make some this weekend!

Makes: 3 1/3 dozen cookies

Ingredients:
2 1/2 cups sifted all-purpose flour
1 tablespoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon ground cloves
3/4 cup all-vegetable shortening
1 cup firmly packed light brown sugar
1 large egg
1/4 cup molasses
Granulated sugar for dipping

Directions:
1. Preheat oven to 350°. Lightly grease baking sheets. In a medium bowl, combine flour, soda, cinnamon, ginger, salt, and cloves.

2. In a large bowl, beat shortening and brown sugar at medium speed with an electric mixer until fluffy. Add egg and molasses, beating until blended. Add flour mixture, beating until combined. Shape into 1 1/2-inch balls. Roll in sugar, and place on prepared baking sheets.

3. Bake for 12 to 15 minutes. Cool on pan for 10 minutes; remove to wire racks to cool completely.
