Bacon Wrapped Scallops

I bought some dry sea scallops yesterday to quench my craving for some...bought da big ones!  :drool: 2 lbs. for $17 per lb.!  shocked003

So, been looking up recipes and found these 2 and will try to make at least one of them, if not both:

I'll let ya know later how they came out. I do plan on following the directions to par-bake the bacon first so the scallops do not dry out.

I decided on the 2nd recipe. Half of the scallops are marinating and I just par-baked the bacon. If I would have thought better I would have only got 1lb. of scallops. I did not realize I needed to cut them in half. There's 12 to a lb. so now there's 24!

Maybe I'll freeze the 2nd lb. for a later use...like my fav, beer batter fried scallops!

Scallops are done and everybody loves them...no matter how expensive they are. Maybe they will help pay for them next time.  :whistle1:

The ice needed to keep them fresh would probably cost more than postage itself. LOL
