This sounds good although, I'd have to add something tangy like a little vinegar while reducing a bit of the chicken broth or add something like some mustard (ground or dijon) or sour cream or buttermilk/ranch dressing.

I never liked them until about 10 years ago, maybe, when I tried them roasted and then braised. If you braise them you should brown them first then braise them in chicken broth or something. It will tame the bitterness.

I like them best with some chopped bacon. :)
