Serve this southern corn salad as a side dish.

Makes 4 servings (4 cups)
Total time: 25 minutes

Ingredients:
4 slices thick-sliced bacon, diced
3/4 cup diced red bell pepper
1/2 cup diced onion
1/4 cup dry sherry
4 cups fresh corn kernels
1 cup heavy cream
1 tsp. Tabasco sauce
Kosher salt and black pepper to taste
1/2 cup thinly sliced scallions

Directions:
Sauté bacon in a large sauté pan over medium heat until crisp. Pour off all but 1 Tbsp. drippings. Add bell pepper and onion to sauté pan; cook until nearly soft, about 5 minutes.

Deglaze pan with sherry until liquid is nearly evaporated, scraping up bits from the bottom of the pan. Stir in corn, cream, and Tabasco.
Simmer until mixture thickens, 3–4 minutes.

Season salad with salt and pepper, then stir in scallions.
