Mother Sauces
« on: December 24, 2016, 11:30:51 AM »
You want to eat healthy? Then learn how to make your own sauces, condiments, vinaigrettes, etc. They are a lot easier to make than you think. On top of that, let's say, a tomato/pasta sauce can be made in a slow cooker in a big batch at once then bagged into meal sized portions and frozen for later use. This will save you time, money and you can customize them to your tastes and/or dietary requirements! You can do a quick cooking sauce or a slow all day sauce. You also mix and match various herbs and spices to your liking!

http://culinary.about.com will take you on a cooking school approach to cooking so you can make what you want to your heart's desire!

Here's the five basic mother sauces and their off-springs:

You will not only eat healthier but you will learn about cooking in general and learn to make better tasting foods. For instance, a traditional mayonnaise is made by whisking (until your arm hurts) until you get the proper creaminess and emulsion. But you can do it with a blender, food processor, or even a stick blender! This will make the process much easier and will usually make it creamier.

I made the Miracle Whip using a food processor. It's very easy. The only hard part is standing there slowly drizzling in the oil. But it sure beats whisking and slowly pouring the oil at the same time!
