That looks like a wonderful dish!  :thumbup:

Kay cooks dishes like that from time to time and while we've never had it with Andouille sausage she has used many others, like, Kielbasa, Polish, Italian and others that I surely don't remember at this moment. She also has used different kinds of beans, not only the reds, but also pintos northern whites and a couple of times she had tried the bean mixes, like three bean and fifteen bean(16?) mixes.

Oh! And for breakfast this AM I had pork Chorizo and egg scramble with 6" flour tortillas!  :hah!:

I've made rice and beans with various meats and beans too. Makes for a nice change from time to time. :)

Ha! I've bought something similar but was frozen.I think Taco Bell has something like that too.
