This is a menu for our Christmas dinner from our granddaughter who will be 1yr old on the 28th December, the prices are just for fun, but the food is what we having

I used to create and print out a menu for Thanksgiving and Christmas...when I used to cook much larger meals. Now, it's usually just my immediate family but I still make enough for whoever may drop by and for plenty of leftovers. LOL

GrandMa Kay's Christmas Menu.

Gwaltney Ham
Sea Food & Pasta Salad
Green Bean Casserole
Green Salad
Deviled Eggs
Triple Chocolate Bundt Cake

Kay has already made the sea food salad using small canneroni pasta as the base and then adding shrimp, crab meat, boiled eggs, veggies like chopped celery and green onions, plus pimentos, Mayo and a few *secret* ingredients.
The ham is going in the oven at about 1:00PM... it's a little over 13lbs, so I'm gonna cook it on 325˚ for 3 hours and that should make it nice.  :disted:
Mindi is bringing the Green Bean Casserole and she always makes a good one, so it will get all gone quickly.
The cake came from Sam's, they are pretty good for store cakes.

Kay's doing the green salad and any other last minute stuff when she gets home from work and then we get to eat it all up!  :bigteeth:

Those hams are great! You can't beat Virginia smoked hams! YUM!!!

We are having:

Roasted Duck L'orange
Potato Salad
Collards with Smoked Ham Hocks
Fresh Italian Bread
Brownies with Ice Cream and Caramel Sauce.

Never had the duck, but me loves those 'Collards with Smoked Ham Hocks'.

It has been a while and now I'm missing them because you mentioned them.  :yikes:

Do you cut the collard leaves in big chunks, or chop them up fine? Always liked mine left in big pieces.

Duck has the taste of chicken but the texture of pork.

I cut mine in big chunks. Too small and it kills the texture...too much like chopped spinach. I also like to cook them slow and low until the juices reduce and make what the old folks called "pot liquor". If you make it right, you can drink the "pot liquor" like water and it tastes great! I remember hearing stories about it since I was little but didn't realize what it was until about 7 years ago and finally I made it myself like that.
