Hmmm, just had a thought...with using bagels for French Toast.

Since they are much more dense, you should be able to do the over-night method when they soak for awhile and they should not be as mushy. I usually don't make them this way because of the mushiness (unless you over-bake them) but this may solve that issue for me... Maybe this coming weekend I may try that...

Ok, I chopped 5 bagels and pt them in a 9x7 in baking dish. I used EggBeaters (one small carton=7 eggs), cinnamon, nutmeg, a dash of salt, some brown sugar, and a bit of vanilla whisked in a medium bowl. Poured it over the bread and let it soak for about 10 minutes.

I mixed the bread up a bit so it can start soaking in the rest of the egg mixture and let it sit for another 10 minutes. Then I melts a few tablespoons of butter and drizzled it over the bread mixture. I let it sit for about 2 hours. Usually, you'd let something like this sit overnight but since bagels are so spongy and I kept turning them over I didn't let it sit that long.

I baked it at 350° until almost done then added more brown sugar and melted butter and baked it a bit longer. It turned out pretty well! Now I just need to nail down some exact measurements. But I loved the texture!!! It wasn't mushy like most are.

Last night I had some ground beef and didn't want to make the usual pasta and tomato sauce with it nor burgers/meatballs, etc. So, I fried it while breaking it up along with some onions and garlic. Then I took a package of Velveeta I had sitting and needed to use up and made a cheese sauce just as I do for mac and cheese. With mine, I add a bit of dijon mustard and use white pepper so you don't see the specks of pepper in it. I made the sauce a bit thin so when you cut it a little bit will ooze out.  :drool:

I mixed the beef mixture with the cheese sauce. I purchased some Pillsbury pizza crust, rolled out and put it on the crust. I sealed it with an egg wash, cut slits in the top so steam will escape, and also brushed the top with the egg wash to help brown it a bit and to harden the crust.

425° in the oven for about 12 minutes gave me a nicely browned crust! The results? We usually have some type of tomato dipping sauce on the side for things like this...but it didn't need any!

Today, I'm going to make some twice baked potatoes. This is where you bake the taters for an hours, slice them in half, scoop out the flesh. Then mash the flesh with ingredients like sour cream, green onions, chives, cheese, bacon, etc...you get the idea. Then put the filling back into the scooped out shells, top with grated cheese and bake until the cheese melts and it get lightly browned on top. YUM!

Me loves some potatoes! Fixed any possible way is OK, especially baked.

Kay just made a nice little lunch for the two of us... eggs over easy on an English muffin with some bacon strips and cream cheese.

A few days ago I made a ground beef stroganoff...used ground beef instead of diced steak. I then cooked it until it was like a sloppy joes consistency and put it on rolls. It was very good!

Yesterday, I made roasted tomato soup. The difference from the recipe below is that I've added a halved red pepper to the roasting pan ingredients and added some of the bacon fat to the soup and will add some crumbled bacon with a bit of sour cream on top!

I also mae a "gourmet" BLT (as Lealer would call it, LOL, she's the "Plain Jane" type) using some of the juicy, sweet Heirloom tomatoes a guy on the job gave me. I bought some very good bacon (slow roasted it on the oven), expensive Vermont Cheddar cheese, lettuce,along with some Roasted Garlic Aioli on toast.

Our menu for today will be pork ribs and some of Kay's amazing potato salad. And, DIL Mindi is bringing some of her delicious Deviled Eggs.   :banana:

I made some corn chowder yesterday with potatoes, onions, celery seed (instead of chopped celery), red bell peppers, cubanelles, bacon, garlic, and smoked sausage! Lealer can't stop eating it!  :thumbup:

Had a nice Crock Pot stew this evening... lots of carrots, potatoes, onions and a little beef chunks/cubes.

The stew was great, but the cooking was a challenge because I had to use our gas generator to power the crock.  laughing7

But I used a meatloaf mix, homemade tomato sauce, grated Italian blend cheese. Here's the meatloaf mix which has beef, pork, and veal. They probably sell it in your area but was on sale today and may be even less tomorrow. I'm going back to see. LOL
