Smothered pork chops with onions and gravy, and yellow rice. The rice is VERY good and is low in sodium!

Although, I'm making it tonight for tomorrow's dinner, I'm making a bacon, onion, cheese meatloaf! I finely dd bacon and onions then sauteed the bacon until most of the fat rendered out but was still soft. I removed the bacon from the pan and sauteed the onions in the bacon fat.

Then I'll add those to the ground meatloaf mix with spices, an egg, a bit of bbq and wochestershire sauces, shredded cheese, and some breadcrumbs. ;)

EDIT: I shaped the meatloaf and put it in the oven. Then, I turned around and saw the bacon ,onions and cheese sitting on the counter!  :o :o :o

I don't believe I left those out! I guess I was tired from work and just couldn't wait tit down and relax!   :rofl2 :rofl2 :rofl2 I quickly added them since the meatloaf was only in the oven maybe 30-60 seconds.  :rolleyes:
