I was looking for something quick and easy so I made this yesterday and it was quite tasty! I did have to double the sauce. I did have to leave out the spinach or Brandon would not have eaten it. I also left out the bacon to reduce the high sodium content...the smoked sausage was bad enough.

EDIT: I forgot to mention that instead of oil I used duck fat which really boosted the flavor!

From time to time Kay makes something almost exactly like this for me, without the spinach... it's good stuff!
