Now THIS is how I've pictured Italian grandmothers making lasagna! Very labor-intensive but appears to be very rich! It make take 2-3 days to prepare but I think I'll try it!  :eat:

Made the lasagna bolognese yesterday and let it sit. Just made the bechamel and the fresh pasta sheets. Now I'm warming up the sauce and will start assembling it then it goes into the oven! heehee

Now, I did make a few mistakes. LOL Instead of adding a layer of bechamel first I added a layer of ragu! So...I removed it and started over. I don't think it would have make a big difference. Then, I did a layer backwards! LOL When it was almost assembled I realized that I never boiled the noodles! LMAO

I have read a number of recipes similar to this where they say because the noodles are so thin you don't have to boil them first. There's 15 minutes to go so we'll have to wait and see! LOL If I had the night off from work I would have taken more time and even made photos of the process.

I did find the ragu to be a bit bland after tasting it so I spiced it up with some pizza seasoning blend from King Arthur. That stuff is good on a lot of thing although it is a tad spicy! I also added some white pepper and a dab of dijon mustard to the bechamel... as I usually do when I make mac and cheese except I didn't add a sprig of thyme or rosemary then remove it, as I usually do for mac and cheese. Maybe next time.

Yes, it is a labor-intensive dish. However. you can make the ragu, bechamel, and the sheets separately way ahead of time and freeze/refrigerate them until your ready to assemble it. It's actually, not that hard doing it that way...especially if you have a Kitchenaid pasta sheet roller. Only took me 5-10 minutes to roll the sheets.

It is out of the oven and has been sitting for a bit. I ran a butter knife around the edges of the dish to loosen it and licked the knife. Boy! Was it good! Can't wait for it to set and cut a slice!!!

Excellent! Even for my mistakes! LOL I thought it would need extra sauce because I didn't boil the sheets but it was great without it! It is DEFINITELY worth the trouble!!!

Now, I can rest and get some well-deserved sleep! LOL Cya! :)
