Kay and I started using just this way of preserving tomatoes back in 2005 when we had our first garden here. We grew way too many tomato plants and the harvest was almost overwhelming, so freezing was the only way to save them. Kay played around with canning, but it was way too labor intensive and we always worried about spoilage.

The one thing I miss from my last job is that one guy I worked with grew tomatoes and would always have a bumper crop. He had great tomatoes and some were heirlooms and he would give me a big bag full of them. I would make my roasted tomato soup and give him some.

A guy a my new job is also a farmer and plans on doing the same as he said he seems to grow too many. LOL

I tried canning once and yes, very labor intensive. I'd rather buy them. LOL
