Raclette-Gruyère Mac and Cheese with Pickled Shallots

I remember hearing about raclette but have never used it. After a search, I started to remember why. It's expensive and hard to find. So, I looked up substitutes and found this great article about good subs as well as info about each one and how melty they are as well ashow they taste, etc.:

I always keep blocks of Gruyere and Parmesan cheeses in my fridge...yeah, the good stuff! LOL And sometimes smoked gouda. If you can find REALLY good smoked gouda, get it!!! You'll love to just slice it eat it plain, let alone, add it to your favorite dishes. It'll really bump up the flavor of your favorite dishes.

I love cheese, but have never heard of this variation.
As for price, you are right that it's very expensive, as in this example that I found:
 


And, I love smoked Gouda, when Kay picks some up she has to guard against me using it up in sandwiches.  laughing7

I usually get an 8oz block or wedge which is around $6.99. Sometimes, I'll get the smoked version.

I'm the same way with smoked gouda! But, I'll just cut pieces off of it and eat it plain. LOL
